Equipment

  • Ninja Creami The key appliance for processing the frozen mixture into a smooth sorbet.
  • Blender or Food Processor: To blend the cucumber, mint, lime juice, and sweetener until smooth before freezing.
  • Freezer-Safe Container: For freezing the blended mixture for at least 24 hours.
  • Measuring Cups and Spoons: For accurately measuring the ingredients.
  • Peeler: To peel the cucumber.
  • Knife and Cutting Board: For chopping the cucumber and mint.
  • Spatula: To help scrape down the sides of the blender and transfer the mixture to the freezer-safe container.

Ingredients

  • 1 medium cucumber (peeled and diced)
  • 1 cup fresh mint leaves (packed)
  • 2 tablespoons lime juice (freshly squeezed)
  • 2-4 tablespoons honey or agave syrup (adjust based on sweetness preference)
  • 1 cup water or coconut water (to help blend the ingredients smoothly)

Instructions

  • Peel and dice 1 medium cucumber, then rinse and pat dry 1 cup of fresh mint leaves.
  • Blend the cucumber, mint, 2 tablespoons of lime juice, and 2-4 tablespoons of honey or agave syrup with 1 cup of water until smooth
  • Transfer the mixture to a freezer-safe container and freeze for at least 24 hours.
  • After freezing, place the container in the Ninja Creami and select the “Sorbet” function.
  • Scoop the sorbet into bowls, garnish with mint or cucumber, and enjoy!

Notes

  • Ingredient Freshness: Use fresh, high-quality cucumbers and mint for the best flavor and texture. Avoid overripe cucumbers, as they may affect the taste.
  • Freezing Time: Ensure the mixture is frozen for at least 24 hours for optimal consistency. If it’s not frozen long enough, the sorbet may turn out too soft.
  • Adjusting Sweetness: The amount of honey or agave syrup can be adjusted based on your personal preference for sweetness. Start with less and add more if needed after blending.
  • Blending Thoroughly: Make sure to blend the mixture until completely smooth to avoid any chunks in the final sorbet. Scrape down the sides of the blender as needed.
  • Storage: If you have leftovers, store the sorbet in an airtight container in the freezer. It can last up to a week, but may become hard. Reprocess in the Ninja Creami if it gets too firm.
  • Serving Tip: For an elevated presentation, garnish the sorbet with extra mint leaves or thin cucumber slices just before serving.
